La Tortillería Awarded the Sello M, Mexico’s Official Seal of Authenticity

Every now & then, something happens that makes you pause & reflect on the journey so far.
Recently, La Tortillería was awarded the Sello M, the official seal of authenticity from the Mexican Government. It’s a recognition given to a small number of businesses around the world that represent Mexican cuisine & to receive it here in Australia feels very special.
The Sello M is awarded by the Secretaría de Relaciones Exteriores in collaboration with the Academia Mexicana de Gastronomía, backed by the Mexican government. Its purpose is to recognise & certify businesses that genuinely represent Mexican gastronomy, not just through quality, but by protecting cultural identity.
From the beginning, our focus has simply been on doing things with care, staying close to traditional methods, respecting the process & a commitment to share an honest representation of Mexican food.
Much of that starts with corn.
Nixtamalization, an ancient technique that’s been used for thousands of years, remains at the centre of what we do. It’s not the fastest way, but it’s the right one & it continues to be the way we make our tortillas today.
That same approach carries through to our Eatery in Kensington & to everything we produce. Over time, it has quietly guided the way we work, without ever really trying to make a big statement of it.
As Mexican food continues to grow & evolve in Australia, there’s an increasing mix of interpretations & styles. The Sello M offers a point of reference within that, recognising those working closely with traditional techniques & a strong sense of cultural context.
To be acknowledged in this way, by Mexico itself, is something we’re genuinely grateful for.
It feels less like a finish line & more like encouragement to keep going, to keep showing up every day, doing things carefully & sharing this food in the way we believe it deserves.
